Kenneth Karjane trained in Stockholm and Copenhagen before bringing his obsessive sourdough craft back to Tallinn — and the city queued up immediately. Almond croissants, cardamom buns, and pastel de nata come fresh from the ovens from 4am. By mid-morning, the best pieces are gone.
